Seeing as you are planning on building everything from source it might be interesting to try using the uclibc C library instead of the standard GNU one. It's much smaller meaning more programs can be packed in and less memory usage. I don't know how well it is supported under gentoo and there are probably lots of applications which would break but it would be an interesting project at least
